Smash Banana Bread Mini Cupcakes

I don't usually post recipes, but this is too good not to share.

1 cup white sugar
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1/2 cup Spectrum Palm Shortening
3 ripe bananas, mashed

Preheat oven to 350F

Kids help fill a "Mini Cupcake Pan" with liners (optional: spray the liners with (Canola) Oil for quick and easy release)

In one bowl, kids help stir sugar, flour, baking soda and salt.

In another bowl, kids help SMASH bananas with forks and/or a potato masher. Once sufficiently smashed (some bits OK), combine bananas with Spectrum Palm Shortening until well blended.

Kids help add dry ingredients to wet in small batches and stir.

Parents use a tablespoon to fill cupcakes liners.

Parents bake 8-10 minutes until a toothpick inserted into the cupcake comes out dry.
